Our Gold Series of coffees feature premium, limited-edition offerings that represent the truly special side of coffee. We purchase small amounts of ones that we find unique and interesting, and we roast them until they're sold out. Once they're gone, they're gone.
We taste notes of cinnamon, blackberry and brown spice in this lighter-bodied offering from Costa Rica.
We're roasting this similarly to our naturally processed Ethiopian coffee, at a medium-light level, which we believe allows this coffee to shine.
Costa Rica is perhaps the most advanced coffee producing country in Central America, in part because of it willingness to innovate, which includes experimenting with processing methods.
In fact, the complex flavors in this coffee can be attributed toĀ its anaerobic processing. After being picked, some of theĀ mucilage ā the layer under the skin ā is left on the beans, which are then fermented in air-tight, stainless steel tanks.Ā The lack of oxygen imparts unique characteristics, ones that are absent if a more traditional method is used.
