We are really excited to offer this special edition coffee out of Guatemala.

This coffee is grown on the same farm as our Guatemala Santa Clara, in the Acatenango region of the country, but what makes this one special is its varietal: Pacamara.

(Varietals in coffee are similar to those in apples [ex. Golden Delicious, Granny Smith] and grapes [ex. Pinot Noir, Merlot].)

Pacamara is a cross between two other varietals (Pacas x Maragogype) that originated in El Salvador in the 1950s. It's known for its very large bean size and its potential to yield exceptional tasting coffee.

This Pacamara in particular was shade grown at 5,800 feet above sea level. It underwent a 29-hour fermentation and was then washed and kept under clean running water for 14 hours. From there it was patio sun dried to 16% humidity, then transferred to raised beds to dry from 16% to 11.3%.

This is perhaps the most interesting Guatemalan coffee we've offered to date, and we purchased about 130 pounds of it. It's sweet and fruity with flavor notes that remind us of sipping wine. Once it's gone, it's gone!
